Sesame Pork Salad With Rice and Vegetables
This pork salad is made with cooked pork tenderloin, rice, snow peas, cucumber, and a flavorful sesame and soy sauce dressing. Feel free to substitute chicken for the pork in this recipe.
Prep Time: 25 to 30 minutes
Total Time: 30 minutes
Ingredients:
- 1 1/2 cups pork tenderloin, cooked and cut in slivers
- 3 cups cooked rice
- 4 ounces snow peas, trimmed and sliced
- 1 medium cucumber, seeds removed, peeled and cut in julienne strips
- 1 medium red bell pepper, cut in julienne strips
- 1/2 cup sliced green onions
- 2 tablespoons toasted sesame seeds
- 1/4 cup chicken broth
- 3 tablespoons rice or white wine vinegar
- 3 tablespoons soy sauce
- 1 tablespoon peanut oil
- 1 teaspoon sesame oil or toasted sesame oil
Instructions:
Combine pork, rice, snow peas, cucumber, bell pepper, green onions
and
sesame seed in large bowl.
Combine chicken broth, rice wine vinegar,
soy
sauce, peanut oil and sesame oil in small covered jar; shake to
mix well.
Add to salad; toss lightly.
Serve slightly chilled or at room
temperature.
Serves 4 to 6
