Cook Time: 2 hours
Total Time: 2 hours 5 minutes
Ingredients:
- 1/4 cup sugar
- 1 teaspoon chili powder
- 1/4 teaspoon ground cayenne pepper, or to taste
- 1 teaspoon dried leaf oregano leaves
- 1/2 teaspoon pepper
- boneless pork loin roast, about 2 1/2 pounds
Instructions:
Mix sugar, chili powder, ground cayenne pepper, oregano and pepper, and rub over the pork
roast. Cover and refrigerate 30 minutes.
Heat oven to 325°.
Place pork, fat side up, on rack in a shallow roasting pan. Insert meat
thermometer or oven probe so that the tip is in the thickest part of the pork and
doesn't rest in the fat. Roast, uncovered, until thermometer registers
about 165°, about 2 hours.
