Pork Chops With Soy Garlic Sauce

These pork chops are browned and then simmered with a very simple sauce made with a little sherry or chicken broth, soy sauce, brown sugar, and garlic. It's an easy yet satisfying pork chop dish perfect for any weeknight meal.

Instructions:

  1. Trim fat from pork chops. Heat oil in skillet over medium-high heat; add pork chops and brown, turning to brown both sides. Remove chops and add a little more oil if needed. Reduce the heat to medium.
  2. Sauté garlic for a minute.
  3. For sauce, combine the 2 teaspoons of oil, sherry (or broth), soy sauce, brown sugar and red pepper.
  4. Place pork chops in skillet and pour sauce over them. Bring to a simmer and turn the heat to low. Cover tightly and simmer until the chops are tender and cooked through, about 30 to 35 minutes. Add a tablespoon or two of water if sauce cooks down too much. Turn chops once. Remove chops to warm platter and cover loosely with foil to keep warm.
  5. Dissolve the cornstarch in the cold water; add to sauce and continue to cook until thickened.
  6. Pour sauce over chops and serve.
