Parmesan Flank Steak
Flank steak is cooked with a bread crumb and Parmesan cheese coating, then it's simmered with a little wine. Serve this flank steak with mashed potatoes and green beans or spinach for a tasty family meal.

Total Time: 45 minutes
Ingredients:
- 1 cup fine dry bread crumbs
- 1/2 cup grated Parmesan cheese
- 2 tablespoons finely chopped parsley
- 3/4 teaspoon salt
- 1/8 teaspoon pepper
- 2 eggs, beaten
- 2 tablespoon milk
- 1 1/2 pounds flank steak, cut in serving size pieces, pounded to tenderize
- 1 clove garlic, finely minced
- 1/4 cup olive oil
- 1/2 cup dry white wine or sherry
Instructions:
Combine bread crumbs, cheese, parsley, salt and pepper; mix well.
Combine beaten eggs with milk. Dip meat in egg mixture, then in
bread crumb mixture; repeat until all eggs and crumbs are used.
Cook garlic in oil. Brown meat slowly in seasoned oil. When well
browned, lower heat and add wine.
Cover and simmer 10 minutes.
