Caribbean Steak With Curry Powder

In this recipe, steak strips are cooked with jalapeno, garlic, and chopped onions, seasoned with curry powder and ginger.

Prep Time: 10 minutes
Cook Time: 18 minutes
Total Time: 28 minutes

Ingredients:

  • 4 tablespoons vegetable oil
  • 1 clove garlic, minced
  • 1 jalapeno pepper, seeded and chopped
  • 1 1/2 cups chopped onions
  • 2 pounds sirloin steak, cut into strips
  • 1 tablespoon curry powder
  • 1 teaspoon ground ginger
  • 2 cups coconut milk or water

    Instructions:

Heat the oil in a large skillet over medium heat. Add the garlic, jalapeno pepper, and onions. Cook, stirring, for 2 minutes, then add the sirloin strips to the pan.

Sprinkle the sirloin with the curry powder and ginger. Cook over medium heat, stirring and turning, until the meat is lightly browned, about 5 minutes. Add the coconut milk or water. Lower the heat to a simmer and cover the pan. Cook for about 10 minutes, or until the meat is tender.

    Serves 6.
