Ginger Beef Skewers

  • 1/2 cup soy sauce, low sodium
  • 6 green onions, chopped, with tops
  • 2 tablespoons sugar
  • 1 tablespoon vegetable oil
  • 1 1/2 teaspoons cornstarch
  • 1 clove garlic, crushed and finely minced
  • 1 teaspoon grated fresh ginger root or 1/2 teaspoon powdered ginger
  • 2 pounds boneless beef sirloin steak
  • metal skewers or bamboo skewers*

In a small saucepan, combine soy sauce, chopped green onions, sugar, vegetable oil, cornstarch, garlic and ginger. Simmer, stirring constantly, for about 1 minute, or until thickened. Cover and set aside to cool. Slice beef into 1/8-inch thick strips about 3 to 4 inches long and 1 inch wide. Thread beef onto skewers keeping meat as flat as possible; brush both sides of the sliced beef with the cooled sauce. Place skewers on rack of broiler pan or on oiled preheated grill; broil or grill to desired degree of doneness.
*If using bamboo skewers, soak the in water for 15 to 20 minutes.
Tip: Beef is much easier to slice if partially frozen.
