Impossible Beef Pie with Tomatoes
This easy quiche is made with baking mix, eggs, leftover beef, cheese, and chopped vegetables. Serve this delicious beef pie for lunch or dinner with a salad.

Cook Time: 45 minutes
Total Time: 60 minutes
Ingredients:
- 3 cups cooked beef, cut into bite-size pieces
- 1 cup chopped onion
- 1 cup thinly sliced celery
- 3 tomatoes, coarsely chopped
- 1 1/2 cups Swiss cheese or mild Cheddar cheese, shredded
- 1/4 cup melted butter
- 5 eggs
- 1 1/4 cups Bisquick baking mix
- 1/2 teaspoon garlic salt
- 2 1/4 cups milk
Instructions:
Heat oven to 350°. Grease a 13x9x2-inch baking dish.
Layer beef, onion, celery, tomatoes and shredded cheese in the baking dish. Beat remaining
ingredients until smooth, about 20 seconds in blender or 1 minute with electric hand-held
mixer on high.
Pour egg mixture over layers. Bake for about 45 minutes, or until knife inserted in center comes out clean. Let stand for 5 minutes before serving.
Impossible beef pie serves 8.
