Tex-Mex Macaroni and Cheese
This is a flavorful combination, made easy with a box of macaroni and cheese, ground beef, and vegetables. Serve this delicious mac and cheese with a tossed salad for a meal your family will want again and again. Feel free to use packaged Velveeta and shells in this recipe or an organic macaroni and cheese.

Cook Time: 20 minutes
Total Time: 35 minutes
- 1 pound ground beef
- 1 bell pepper, chopped
- 1/2 cup chopped onion
- 1/2 cup mushrooms, sliced, optional
- 1 can tomato paste
- 1/2 cup water
- 1 can (12 to 15 ounces) whole kernel corn, undrained
- salt and pepper, to taste
- 1 package macaroni and cheese, prepared
In large skillet, brown the ground beef with the chopped
pepper, onion and mushrooms. Stir in the tomato paste and water
Cook the macaroni and cheese according to package directions,
adding milk and butter if required. Add the macaroni and cheese
to the beef mixture. Mix well and serve.
