Skillet Beef and Red Beans
This easy skillet meal is a nice combination of ground beef, tomatoes, red beans, and corn.
- 1 pound lean ground beef
- 1 cup chopped onions
- 1 can (14.5 ounces) diced or crushed tomatoes with juice
- 1 can (8 ounces) tomato sauce
- 1 can (12 to 15 ounces) whole kernel corn, drained
- 1 can (15 to 16 ounces) red beans, drained
- 1 tablespoon chili powder
- 1/2 teaspoon salt, or to taste
- 1/8 teaspoon pepper, or to taste
In a large skillet, brown beef and onions; drain off excess fat. Add remaining
ingredients, stir well. Cover and simmer 30 to 40 minutes. Taste and adjust seasonings.
Serve with hot cooked rice.
