Skillet Beef and Red Beans

This easy skillet meal is a nice combination of ground beef, tomatoes, red beans, and corn. A nice dish for a busy weekday meal.

Prep Time: 10 minutes
Cook Time: 45 minutes
Total Time: 45 minutes

Ingredients:

  • 1 pound lean ground beef
  • 1 cup chopped onions
  • 1 can (14.5 ounces) diced or crushed tomatoes with juice
  • 1 can (8 ounces) tomato sauce
  • 1 can (12 to 15 ounces) whole kernel corn, drained
  • 1 can (15 to 16 ounces) red beans, drained
  • 1 tablespoon chili powder
  • 1/2 teaspoon salt, or to taste
  • 1/8 teaspoon pepper, or to taste

Instructions:



In a large skillet, brown beef and onions; drain off excess fat. Add remaining ingredients, stir well. Cover and simmer 30 to 40 minutes. Taste and adjust seasonings.
Serve with hot cooked rice.
