Baked Shrimp with Cocktail Sauce

Simple baked shrimp is served with a chilled cocktail sauce made with chili sauce and mayonnaise.
  • 2 eggs, slightly beaten
  • 1/4 cup water
  • 2 cups shrimp, shelled and deveined
  • 2 cups fine dry bread crumbs
  • oil
  • salt to taste
  • pepper to taste
Sauce
  • 1 cup chili sauce
  • 1 cup mayonnaise
  • 1/4 cup pickle relish
  • 1 hard cooked egg, chopped
  • 1/2 teaspoon prepared mustard, brown or your favorite
  • 1 teaspoon grated onion
  • 1 tablespoon lemon juice







To make shrimp:
Beat eggs slightly with water. Dry shrimp on paper towels; dip first into crumbs, then eggs, then into crumbs again. Place shrimp in well-oiled shallow baking pan so they do not touch; sprinkle with salt and pepper. Turn once with a broad spatula so that both sides are oiled. Bake in preheated 450° oven 6 to 8 minutes. Serve with Shrimp Sauce or your favorite sauce.

To make sauce:
Combine all sauce ingredients; chill. Serve sauce with baked or broiled shrimp.
