Hamburger Soup
Bob's hamburger soup is loaded with flavor and vegetables. Serve this soup with crust rolls or cornbread.
Ingredients:
- 1 1/2 pounds ground beef
- 2 medium onions, chopped
- 3 to 4 cloves garlic, minced
- 1/2 cup chopped celery
- 1 cup chopped carrots
- 1 can (28 ounces) diced tomatoes
- beef broth
- water
- 1 cup chopped cabbage
- 1/3 cup raw rice
- 1 cup diced potatoes
- 1 tablespoon fresh chopped oregano or 1 teaspoon dried
- 1 tablespoon fresh chopped thyme or 1 teaspoon dried
- 1 tablespoon chopped fresh basil or 1 teaspoon dried
- pepper, to taste
- salt, to taste
- dried or fresh parsley
Instructions:
One and a half pounds of hamburger. Brown the meat well; remove all, or
most of the grease. Set the meat aside, and sweat two medium onions, along
with copious amounts of garlic. To this add 1/2 cup of chopped celery. One
full cup of chopped carrots. One 28oz can of chopped tomatoes. enough beef
broth and water to = two quarts of liquid. Add the meat.
Simmer these ingredients for about 30 minutes. Then add: one cup of
chopped cabbage, 1/3 cup uncooked rice, one cup of diced potatoes, 1 tb.
spoon each of oregano, thyme, basil, and salt. (pepper to taste) add 1/2
cup of dried parsley [or to taste]. Cook it another 45 minutes. It tastes better the
next day.
