Easter Sausage Pie

Crust:
  • 2 cups Flour
  • 1/2 teaspoon Baking powder
  • 2 Eggs
  • 1/2 teaspoon Salt (to taste)
  • Water to mix
  • 1 tablespoon Lemon juice
  • 1 To 2 tbsp sugar
Filling:
  • 3 Eggs
  • 4 cups Ricotta cheese
  • 4 cups Cooked sausage
  • 1/2 cup Grated cheese
  • Salt (to taste)





In a large bowl for each part of the pie, follow the ingredient list with each of the following.Prepare pie crust by usual method. Mix filling ingredients. After completing each, put crust and filling in pie pan, put strips of crust over pie( lattice ) and brush 1 beaten egg on top of pie. Bake in oven at 350° for 45 to 60 minutes.
Makes 2 pies.
