Golfers' Crockpot Roast

Ingredients:

  • 4 to 5 lb. beef roast
  • 4 potatoes
  • 2 onions
  • 5 carrots
  • Salt & pepper to taste
MARINADE: Ingredients:

  • 1 1/2 c. water
  • 5 oz. soy sauce
  • 1/4 c. brown sugar
  • 1 tbsp. lemon juice
  • 4 oz. Bourbon
  • 1 tbsp. Worcestershire sauce

    Instructions:

    Combine marinade ingredients. Marinate roast in refrigerator overnight. Next morning, pare and cut vegetables into chunks. Place vegetables in crockpot. Put roast on top and add 1/2 cup marinade. Cover and cook on HIGH for 1 hour. Reduce heat to LOW and continue cooking for 7 to 9 hours.
