Minestrone Soup For The Crockpot
Ingredients:
- 1 c. diced ham
- 1 lb. corn chickpeas
- 1/2 c. minced onion
- 1 clove garlic, minced
- 1/2 c. diced carrots
- 1/2 c. diced celery
- 1 pkg. frozen chopped spinach
- 10 oz. can tomatoes
- 1 med. potato, diced
- 2 tbsp. parsley
- 1 qt. chicken broth
- 1/2 c. elbow macaroni, cooked
- Grated Parmesan cheese
Instructions:
Combine all ingredients except macaroni and cheese in "crockpot"
cooker. Add water if chicken broth does not cover. Cook on high 1
hour, then switch to low 6-8 hours. Or cook on automatic 5-6 hours.
One half hour before serving, add macaroni. Serve soup generously
sprinkled with cheese.
