Chili Meat Loaf & Potato Casserole
This meatloaf is baked then topped with a mashed potato and vegetable mixture.

Meat Loaf
Ingredients:
- 1 1/2 pounds lean ground beef
- 3/4 cup finely chopped onion
- 1/3 cup saltine cracker crumbs
- 1 egg, slightly beaten
- 3 tablespoons milk
- 1 tablespoon chili powder
- 3/4 teaspoon salt
Potato Topping
Ingredients:
- 3 cups prepared mashed potatoes
- 1 can (11 to 15 ounces) whole kernel corn with peppers, drained (fiesta or mexican style)
- 1/4 cup thinly sliced green onions
- 1/2 to 1 cup shredded Mexican seasoned cheese
Instructions:
Preheat oven to 375°.
In a large bowl, combine meat loaf ingredients,
mixing thoroughly; press into the bottom of a 9-inch
square broiler-proof baking dish. Bake for about 30 minutes or until
no longer pink and juices run clear. Carefully pour off drippings.
Meanwhile, in a medium bowl, combine all topping ingredients, except
cheese. Spread over meat loaf to edges of pan; sprinkle with cheese. Broil
3 to 4 inches from heat for 3 to 5 minutes or until top is lightly browned.
Serves 6.
