Turkey and Swiss Casserole

This turkey casserole would also be good with mixed vegetables or peas and carrots. Feel free to use cooked chicken instead of the turkey.

Prep Time: 20 minutes
Cook Time: 30 minutes plus green bean cooking time
Total Time: 50 minutes

Ingredients:

  • 1 1/2 cups frozen green beans
  • 2 cups chopped cooked turkey
  • 1 cup shredded Swiss cheese
  • 1 can (10-3/4 oz) condensed cream of chicken soup
  • 1/8 teaspoon ground nutmeg
  • 1 cup biscuit mix, such as Bisquick
  • 1 egg, beaten
  • 1/4 cup melted butter
  • 2 tablespoons milk
  • 1 tablespoon fresh chopped parsley

Instructions:

Cook green beans according to package directions; drain. Add turkey, cheese, soup, and nutmeg; stir well. Spoon mixture into a greased 1-1/2 quart casserole dish.

Place biscuit mix in a medium bowl. Combine egg, butter, and milk; add to biscuit mix, stirring until just blended. Spoon biscuit mixture around edge of casserole, leaving center open. Sprinkle parsley over the center of the casserole.

Bake at 350° F. for 25 to 30 minutes, until hot and bubbly.
