Pineapple Cake with Cream Cheese Ginger Frosting

CAKE: Ingredients:

  • 2 eggs
  • 1 can crushed pineapple in juice -- 20 oz
  • 2 cups flour
  • 1 cup sugar
  • 1 cup brown sugar
  • 2 teaspoons baking soda
  • 1 cup walnuts -- chopped

FROSTING: Ingredients:

  • 1 package cream cheese -- 3 oz
  • 1/4 cup butter
  • 1 teaspoon vanilla
  • 2 cups powdered sugar
  • 1/2 teaspoon ginger

Instructions:



Combine all cake ingredients and pour into an ungreased, 13x9 inch Pyrex pan. Bake at 350^ for 45-50 minutes.
Combine frosting ingredients and spread on cooled pineapple cake.
