Broken Shrimp Jambalaya
Ingredients:
- 1 1/2 lbs broken shrimp (or small shrimp) cooked
- 2 tsp. paprika
- 1 cup peanut oil
- 1 tsp. red, black, white pepper
- 1 onion chopped
- 1 tsp. salt
- 5 cloves garlic
- 1/4 lb smoked sausage
- 2 shallots chopped
- 3 cups rice
- 1 bell pepper chopped
- 5 cups water
Heat oil, add onions, garlic, shallots, bell pepper, smoked sausage, paprika, salt, and peppers and sauté well. Add shrimp, rice and water. Bring to boil, cover, and over very low heat steam for 20 to 25 minutes. Stir with fork and replace cover. Serves 4.
