Smoky Chipotle Corn Bread
Ingredients:
- 1 cup all-purpose flour
- 1 cup cornmeal, stone ground preferred
- 2 tablespoons granulated sugar
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1 cup buttermilk
- 1 cup milk
- 1 egg, beaten
- 6 tablespoons melted butter
- 3 chopped chipotle chiles
Instructions:
Heat oven to 425°. Place a 10-inch cast iron skillet in the oven to heat while you mix the batter.
Mix together all dry
ingredients in a large bow. In another bowl, whisk together all wet ingredients. Fold the wet
ingredients into the dry just until blended. Carefully remove the hot skillet and brush generously with vegetable oil. Spread batter in the pan and bake for 20 to 25 minutes.
