Pineapple Spice Loaf
Ingredients:
- 2 cups sifted all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground ginger
- 1/2 teaspoon ground nutmeg
- 1/3 cup brown sugar
- 1/3 cup vegetable oil
- 1 teaspoon vanilla
- 2 eggs
- 1 can crushed pineapple in juice -- 8 ounce
Instructions:
Into large bowl, sift together first 6 ingredients. Stir in brown
sugar, set aside.
In small bowl, mix oil, vanilla and eggs until well blended. Stir
in undrained pineapple. Add to dry ingredients; stir just until
moistened. Pour batter into greased 9x5x3 loaf pan.
Bake in 350 degree oven 55 to 60 minutes, or until loaf is golden
brown and a toothpick inserted in center comes out clean. Cool
in pan 10 minutes. Remove; cool on rack. Makes 1 loaf
