Peach Muffins

These peach muffins are delicious with the pecan streusel topping. Ingredients:

  • 1 1/2 cups Flour
  • 2 teaspoons Baking powder
  • 1/4 teaspoon Salt
  • 1/4 cup Milk
  • 2 medium Peaches, diced -- to equal one cup
  • 1/2 cup Sugar
  • 1 1/2 teaspoons Cinnamon
  • 1/2 cup Butter -- melted
  • 1 Egg
  • Topping

  • 1/2 cup Pecans -- chopped
  • 1/4 cup Flour
  • 2 tablespoons Butter -- melted
  • 1/2 cup Brown sugar
  • 1 1/2 teaspoons Cinnamon

Instructions:



Preheat oven to 400° F. In a large bowl, combine the flour, sugar, baking powder, cinnamon and salt. Whisk to blend thoroughly.

In another bowl whisk the butter, milk and egg together; pour into the flour mixture and stir just until blended. Fold in peaches. Spoon mixture into greased and floured muffin pans. Combine topping ingredients until crumbly; sprinkle over the batter. Bake for 18 to 24 minutes.
