Blueberry Pancakes
Ingredients:
- 2 cups unbleached flour
- 1/2 cup granulated sugar
- 2 tsps baking powder
- 1/4 tsp salt
- 1/4 tsp nutmeg
- 1 cup blueberries
- 2 cups skim milk, room temperature
- 2 egg whites, beaten
- 1 tablespoon applesauce, at room temperature
Instructions:
Spray a large heavy skillet with cooking spray and heat on medium until hot.
In a mixing bowl, combine flour, sugar, baking powder, salt, nutmeg,
and blueberries. In another mixing bowl, combine milk, egg whites,
and applesauce. Mix dry ingredients with wet ingredients just
until moistened. Ladle in the batter, using 2 or more tablespoons
per cake. Cook for 2 minutes, then flip carefully and cook for
2 minutes more. Repeat with remaining batter.
Serves 8.
