Sal's Lemon-Nut Bread
Recipe From: "Voila!" (Jr League of Lafayette, LA)
- 1/2 cup butter -- softened
- 1 cup sugar
- 2 eggs -- slightly beaten
- 1 1/4 cups all-purpose flour
- 1/2 teaspoon salt
- 1 teaspoon baking powder
- 1/2 cup milk
- 1/2 cup walnuts -- chopped
- 1 tablespoon lemon rind -- grated
- 1/4 cup sugar
- juice of 1 lemon
Cream butter and sugar well in mixing bowl. Add eggs. Mix flour,
salt
and baking powder and add alternately with milk to creamed mixture.
Add
nuts and lemon zest and mix well.
Pour into a greased 5 1/4x9
1/4x3-inch
loaf pan.
Bake in preheated 350F oven 1 hour or until done.
Mix sugar and lemon juice in small pan over low heat to dissolve
sugar.
Pour sauce over hot bread in pan. Cool in pan.
Remove and slice.
