Sour Cream Coffee Cake

Ingredients:

  • 3 tablespoons softened butter
  • 1/3 cup chopped pecans
  • 1/2 cup packed brown sugar
  • 1 teaspoon vanilla extract
  • 3/4 cup sugar
  • 1/2 cup canola oil
  • 3 eggs
  • 2 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup sour cream

    Instructions:



    Stir butter, pecans and brown sugar in bowl until crumbly. Set aside. Beat vanilla, sugar, oil and eggs in mixer bowl until smooth. Add mixture of flour, baking powder, baking soda and salt alternately with sour cream, mixing well after each addition. Layer batter and crumb mixture 1/2 at a time in greased tube cake pan.

    Bake at 350° F. for 50 minutes or until coffee cake tests done. A cake tester or toothpick should come out clean when inserted in the center.
