Pecan Muffins
Ingredients:
- 4 cups all-purpose flour
- 1 cup granulated sugar
- 1 cup packed dark brown sugar
- 1 tablespoon plus 2 teaspoons baking powder
- 1 scant teaspoon salt
- 2 cups milk
- 2 large eggs
- 2 teaspoons vanilla extract
- 8 tablespoons butter, melted
- 1 1/2 cups chopped pecans
Instructions:
In a large bowl, combine the flour, sugars, baking powder, and salt. In a small bowl, whisk together the milk, eggs, melted butter, and vanilla. Pour milk mixture into the dry ingredients; mix all ingredients thoroughly. Fold in chopped pecans. Spoon into greased or paper lined muffin tins and bake at 400° for 20 minutes.
Makes about 2 dozen muffins.
