Spanish Rice Recipe

This basic spanish rice is topped with Monterey jack cheese before serving, but feel free to use a Mexican cheese blend in this rice. It's a meat-free Spanish rice, loaded with chopped vegetables and flavor. Ingredients:

  • 3 cups cooked rice
  • 1 large onion, chopped
  • 4 stalks celery, chopped
  • 1 large green pepper, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 cup tomatoes, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon oregano
  • 1/4 teaspoon pepper
  • 1/2 to 1 cup Monterey jack cheese, grated

    Instructions:



    Saute onion, celery, pepper, and garlic in olive oil. Add chili powder and cumin. Cook, stirring, for about 1 minute; add tomatoes, salt, oregano, and pepper. When tomatoes are cooked through, stir in the rice.

    Top with the shredded cheese and cover, heating just long enough to melt the cheese.
