Spanish Rice Recipe
This basic spanish rice is topped with Monterey jack cheese before serving, but feel free to use a Mexican cheese blend in this rice. It's a meat-free Spanish rice, loaded with chopped vegetables and flavor.
Ingredients:
- 3 cups cooked rice
- 1 large onion, chopped
- 4 stalks celery, chopped
- 1 large green pepper, chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 cup tomatoes, chopped
- 1 teaspoon salt
- 1/2 teaspoon oregano
- 1/4 teaspoon pepper
- 1/2 to 1 cup Monterey jack cheese, grated
Instructions:
Saute onion, celery, pepper, and garlic in olive oil. Add chili powder
and cumin. Cook, stirring, for about 1 minute; add tomatoes, salt, oregano, and pepper.
When tomatoes are cooked through, stir in the rice.
Top with the shredded cheese and cover, heating just long enough to melt the cheese.
