Fragrant Couscous
Ingredients:
- 1 1/2 pounds Couscous
- 8 ounces Peanuts -- broken small
- 4 ounces Raisins
- 4 ounces Dried cherries
- 1 tablespoon Cinnamon
- 1/2 teaspoon Ginger powder
- 1 teaspoon Saffron (soaked in water)
Instructions:
Prepare couscous in water according to package directions. In
a large
bowl add remaining ingredients to cooked couscous. If this is
to be used
as a side dish, reheat mixture in 350 degree oven for 20 minutes.
You can
also use this top stuff eggplant, squash or tomatoes.
