Fragrant Couscous

  • 1 1/2 pounds Couscous
  • 8 ounces Peanuts -- broken small
  • 4 ounces Raisins
  • 4 ounces Dried cherries
  • 1 tablespoon Cinnamon
  • 1/2 teaspoon Ginger powder
  • 1 teaspoon Saffron (soaked in water)







Prepare couscous in water according to package directions. In a large bowl add remaining ingredients to cooked couscous. If this is to be used as a side dish, reheat mixture in 350 degree oven for 20 minutes. You can also use this top stuff eggplant, squash or tomatoes.
