Appalachian Bean Loaf
Ingredients:
- 2 cups beans, mashed
- 2 cups soft bread crumbs
- 2 large eggs, beaten
- 1 tablespoon butter or bacon drippings
- 1/4 teaspoon pepper
- milk
- salt
- 2 tablespoons onion, chopped
- tomatoes or tomato sauce for serving
Instructions:
Combine all ingredients using enough milk to moisten. Pack firmly
into well buttered loaf pan. Bake at 350° for 1 hour or until loaf is
firm. Serve with tomato sauce.
Serves 6.
