Appalachian Bean Loaf

  • 2 cups beans -- mashed
  • 2 cups soft bread crumbs
  • 2 eggs -- beaten
  • 1 tablespoon butter OR bacon drippings
  • 1/4 teaspoon pepper
  • milk
  • salt
  • 2 tablespoons onion -- chopped
  • tomatoes or tomato sauce for serving







Combine all ingredients using enough milk to moisten. Pack firmly into well buttered loaf pan. Bake at 350° for 1 hour or until loaf is firm. Serve with tomato sauce.
Serves 6.
