Beach Party Shrimp Saute

  • 1 cup oil
  • 2 pounds medium shrimp -- about 60, in shells
  • 1 tablespoon salt
  • 1 teaspoon coarsely ground pepper
  • 1 tablespoon dried leaf oregano, crumbled
  • 1 medium onion, thinly sliced
  • 1 tablespoon garlic, crushed and minced
  • 2 jalapeno peppers, trimmed and sliced (with seeds)
  • juice of 2 lemons or 3 to 4 limes







In large pan or Dutch oven over a camp fire heat oil. Add washed unshelled shrimps and stir-fry for 3 minutes. Add seasonings and remaining ingredients. Just before serving add the freshly squeezed lemon or lime juice.
Serves 8.
