Baked Yellow Eye Beans
Yellow eye beans are my favorite beans, and this is a really great recipe for baking them. Start with dried beans in this traditional New England style recipe, along with salt pork or a combination of salt pork and bacon, and, of course, molasses and brown sugar. Delicious!
Broccoli Crunch Salad
This salad, inspired by the one I love at Whole Foods Markets, is simply made with little or no sugar. Feel free to increase or decrease the raisins, onion, or sunflower seeds to suit your taste. With plenty of raisins, you don't need the sugar!
Mongolian Beef
I used sirloin tips in this tasty beef, but thinly sliced flank steak or other flavorful steak could be used as well. Serve with hot cooked rice or a noodle dish for a fabulous Asian-style meal.
Pork Marengo
This pork and tomato skillet dish is great with hot cooked pasta, noodles, or rice. I used very thin chops, sometimes labeled "breakfast pork chops." If you use thicker chops, add to the simmering time. Veal or chicken cutlets would also work well in this recipe.
Baked Macaroni and Cheese
This is a big favorite in our house, and I like to make this with a dash of garlic powder, or I rub the baking dish with cut sides of a halved clove of garlic. Even without the garlic, this is a delicious macaroni and cheese - it's one your family will ask for again and again. Serve this dish as a side dish to a big meal or holiday dinner or serve with a tossed salad for a meatless meal.

Best-Ever Slow Cooker Pot Roast
I make this delicious crock pot roast with potatoes, cabbage, and carrots, but you can leave the cabbage out if you'd like, or add rutabagas or turnips. It's a delicious slow cooker pot roast to make for a busy weekend meal. I like to brown the roast first, but if you're pressed for time, you can skip that step. The leftovers are great for sandwiches!
Chicken Salad With Fresh Herbs
Make this delicious chicken salad for sandwiches or serve on lettuce for a fabulous warm weather lunch. I used herbs I had growing in flower pots on my back deck, a mixture of parsley, oregano, chives, and thyme, but feel free to use your own favorite herbs or what you have on hand.
